Sunday Food Prep Sept 14

Ah, Sundays.  How I love to relax and …..no, wait, not today.  Today we ran our buns off.  It was totally worth it because we got so much done.  Hubster and I cleaned house and I finished the grocery shopping.  We mowed the lawn.  I rode my bike to the library and picked up more books.  Then I did my food prep.

I made three salads for us both:  a taco salad, a BLT salad, and a regular salad.

Can’t wait to eat these.

So, my other prep from top left:  caramel apple cupcakes, a large pot roast that was tonight’s dinner and will be two more dinners this week (open faced beef sandwiches one day, French dip another day, and anything that’s left will be frozen with BBQ sauce for hubby), cooked ground beef for a dinner later this week, twice baked potatoes (we had them with our dinner and I made extras to freeze), cut up green peppers, hard boiled eggs,  and raspberries.  I didn’t post the celery/carrot sticks this week for some reason.

I’m looking forward to the week. Doing food prep takes a bit of time, but it saves me so much later in the week. I’ve been coming home really tired, so grateful for the idea and inspiration.

Sunday food prep

Ah, back on schedule today.  It has been a busy weekend.  I really think every weekend needs to be a 3 day weekend, don’t you?  

Today’s food prep was a bit rushed as I had to go to the grocery store.  But here it is:

From top left:  ramen noodles for salad, cut up green pepper, chicken ramen salad in a jar, original salad in a jar, hard boiled eggs, my veggies for tomorrow, green pepper and celery for tomorrow’s stir fry, cut up cantaloupe, cut up chicken for later in the week, and raspberries.  IMG_20140907_201413_021

Monday Food Prep–Labor Day

I just spent about 3 hours doing food prep along with watching Star Trek II, cleaning out the little freezer and reorganizing, and eating lunch.  So probably did about 2 hours of actual work.

I made egg, bacon, and cheese biscuits.  I got the recipe from 30 day gourmet, in their Freezer Meal cook book.  Here’s what they look like finished.

I used a special pan to make the eggs.  These are simply eggs whisked with a bit of milk.

Here’s the construction:  biscuit, bacon, egg, and a slide of cheese.

I had some eggs leftover.  I have mini bagels.  Breakfast for the week is mine!

Here’s the fruit of all my labors.  From top left:  the bacon, egg, and cheese biscuits wrapped and ready for the week.  Next to them, sliced green peppers, original salad in a jar, (dressing, carrots, celery, tomatoes, chopped red cabbage, and romaine lettuce), raspberries (have two sets), apple cobbler, beef ramen stir fry, buttermilk dressing, frosted brownies, cantaloupe, BLT salad (bacon, tomatoes, and lettuce), and celery and carrot sticks.  I have three original salads, 2 BLT salads, 6 apple cobblers.  Not shown:  tomorrow’s vegetables for me (celery, carrot sticks, green pepper, cucumber).IMG_20140901_141105_998 (1)

For all of the work, it was totally worth it.  I am so grateful to be done, and I have the rest of the day to rest….I mean go for a walk and then mow the lawn.





Reviews for last week’s food prep….

The pudding was gross.  I don’t know why.  It didn’t set well, and was runny.

The chicken wasn’t so great either.  I will probably not cook chicken that far ahead again.  Everything else was really and truly yummy.  However, it pained me to throw the pudding away.

I also had to toss a number of produce items.  As today is the first day of a new month, one of my vows for the month is to reduce the amount of produce I waste.  Which means not buying as much.  I’ve been going to the grocery store once a week.  I’ll keep doing that, but I’ll reduce the quantity.  Hubster is much better about eating the things I get him, which is a good thing.

Food prep for this week is coming.
