yes, you can

29 08 2015

I hear this all the time: “I don’t think I can food prep.”

Yes, you can.

You may not choose to do food prep. There’s nothing wrong with this. It doesn’t work for everyone. It doesn’t always work for me.

But I have an issue with people saying oh, I could never do that. Don’t they know that your thoughts and words influence your reality? Why not make your reality positive?

Actually, I have a bigger issue with people who say they can’t plan meals for a few days, as in how the crap do you have time to go to the grocery store every other day? Or the money? Just planning a few meals takes so much less time.

Anyway, I digress. So for those of you who are intrigued by the thought of doing food prep on Sundays, whether it’s for breakfast every day, a few lunches, or cooking an extra chicken breast to make one more meal later in the week, here’s a fabulous resource: http://www.theleangreenbean.com/how-to-food-prep/

Simple. Easy. Effective.

Don’t make it a huge deal. Cut up a few carrot sticks or slice a cucumber. Double the recipe for your Sunday night dinner and freeze half. It’s a good way to start. And it’s a fabulous help for those evenings when you come home tired out and just want to call for take out….and then you open the fridge and voila….a meal all set for you. It’s almost as awesome as coming home and smelling dinner in the crockpot.

Give it a try. You can do it.

And if you’re ready to do some simple meal planning, here’s a huge help, a website where you can easily upload recipes, plug them into a planner, and have your shopping list made for you: http://www.plantoeat.com. Free month trial. It has changed how I cook and especially how I shop. Amazing.

Food Prep Sunday August 15

16 08 2015

Easy food prep day, just took about 45 minutes.  From top left:  sliced cucumbers, green grapes, raspberries, quinoa, hard boiled eggs, blueberries, cauliflower, sliced strawberries. image

Next week Hubster’s summer ends, so I’ll have to make some more breakfast and lunch items.

This week felt really busy with lots of good exercise and some really good meals. I did the Idaho Wine Run 10K yesterday, and was shocked by how difficult the hills were. The air quality isn’t great here in my neck of the woods. I smelled of smoke when I got home. But with Hubster’s help, we got most of the grocery shopping done yesterday as well as the housework and serious napping.

This week’s plan, as far as exercise:
Monday: bike to work and back, bike lunch, HIIT elliptical
Tuesday: circuit and treadmill
Weds: HIIT treadmill
Thursday: day off
Friday: circuit and elliptical
Saturday: hour walk
Sunday: QiGong and circuit

For food:
Monday: crock pot roast and potatoes
Tuesday: leftover skillet supper
Weds: French dip
Thursday: Hamburgers
Friday: chicken stir fry
Saturday: quesadillas
Sunday: grilled chicken

I am doing challenges on MyFitnessPal and this week’s big challenge is to eat a new fruit or veggie. Huh. I’ll have to think about that.
Onward.
